Our success story
👶 The beginnings
FWG has its origins in 1989 with the founding of Dr. Kaub & Wiesner AG by management consultant Dr. Erich Kaub and Fredy Wiesner. What once started as a consulting firm in the restaurant industry quickly took off with the opening of their own restaurants. In 1991, Fredy Wiesner launched the first Café Sandwich in Zurich's Seefeld district. This was also the start of the journey, always supported and accompanied by his wife Anita and their two sons Daniel and Manuel.
🍽️ The first restaurant
After various smaller cafés and take-aways, a take-away kiosk at Riesbach harbor, a hamburger and sausage vending cart at Oerlikon train station, and an extremely successful pretzel stand at Zurich's main train station, the first actual restaurant was opened in 1997: the Outback Lodge at Stadelhofen train station. With two more Australian restaurants in Winterthur and Uster, the horizon was expanded.
🚀 Start of expansion
In 2004, the first Asian restaurant followed with Nooch Asian Kitchen in Zurich's Kreis 4. The opening of the first Negishi Sushi Bar in Basel in 2006 also marked the start of the ongoing wave of expansion. In September 2011, the first own delivery service was launched in Oerlikon. The portfolio was further expanded with the first burger restaurant, The Butcher, in Zurich's Niederdorf in mid-2015. In summer 2019, a unique Korean concept, Miss Miu, opened on Zurich's prestigious Europaallee. A year later followed a concept modified from The Butcher called The Butcher & his Daughter with a focus on burgers, fried chicken & co. in vegan, vegetarian and plant-based variations. The first virtual brand was added to the portfolio in the summer of 2020 - Poke Nation was born. This was followed by Kitchen Republic as Ghost Kitchen for various FWG brands in Bern, Basel and Zurich.
❤️ Employee development
With the continuous expansion, the number of employees has also grown accordingly. In order to improve the skills of our teams with the ever-increasing demands in the market and also to achieve greater motivation and satisfaction, we have been continuously expanding our resources in employee development for years. With Become N°1, we have created an individual development program that accompanies employees through each level, up to the position of Managing Director. On their career path, employees are supported through five modules of internal and external training, which are individually selected and developed for each level. With Become N°1, we also offer unskilled employees the chance of a successful career in the catering industry. By actively promoting motivated and talented employees, we are able to fill a large number of vacancies internally in the expansion and minimize fluctuation.
👪 Generation change
At the beginning of 2020, the sons Daniel and Manuel have taken over the operational management of FWG from Fredy as Co-Lead Strategy & Innovation. Fredy will of course continue to provide advice and support to FWG and will hold the mandate of Chairman of the Board of Directors.
